Also, if you are a mango lover, don’t let this season go by without trying my salad recipe.

It’s been a while since I posted an easy vegetarian salad recipe and this recipe is perfect for summer, spring or winter (If you keep getting good mangoes throughout the season).

There are three main ingredients for this salad and you can add the rest as per your choice/availability. They are:

Za’atar,

A traditional Middle Eastern spice blend that typically includes thyme, oregano, sumac, and sesame seeds. Its earthy, pungent, and slightly nutty flavor makes it a versatile ingredient that can flavor a variety of dishes, especially salads or meats.

It is said to be rich in antioxidant and anti-inflammatory properties, so it is good for digestion and boosts immunity.

Mango:

Use whichever sweet mango you have or like. Often called the “king of fruits,” mangoes add sweetness and juiciness to this salad. Mangoes are rich in vitamins A and C and fiber, which aid digestion and keep you feeling full for longer.

  • fresh sweet mangoes , Use any variety you like.
  • Chickpeas , Use fresh or canned chickpeas. They should be boiled or slightly cooked chickpeas.
  • Za’atar , Use your favorite brand and it is readily available at any Middle Eastern grocery store or international grocery chain.
  • Cucumber
  • Onion , I like to use red onion here for flavor, but you can use white or yellow onion or omit it altogether.
  • Avocado , This adds a lot of creaminess to the salad.
  • Fresh coriander and mint – This mixture gives a very tasty and powerful flavour to the salad. You can add both or any one of them as per your preference.
  • Pistachio , You can use any nuts you like but pistachios pair really well with these flavors.
  • Lemon – Use fresh if possible
  • Spices – Salt, chili flakes

How To Make This Easy Mango Chickpea Salad:

  1. Prepare the chickpeas: First, put the chickpeas in a large salad bowl.
  2. Add the vegetables: Add the chopped cucumber and red onion to the bowl containing the chickpeas.
  3. Mangos include: Gently mix in the chopped mango. Take care not to mash the mango pieces, as they add a lovely texture to the salad.
  4. Add avocado: Be careful while mixing them to avoid them from becoming mushy.
  5. Add herbs: Add chopped coriander and mint.
  6. Add nuts and spices: Add chopped pistachios or other nuts of your choice, salt, za’atar, and chili peppers.
  7. Add lemon juice: Add freshly squeezed lemon juice for a tangy flavor.
  8. Sprinkle with za’atar: Sprinkle some more za’atar on top,Add some more of the fresh herb mixture for color and extra flavor. Serve immediately or refrigerate to eat later.

  • 4 tablespoons peeled pistachios – finely chopped

  • Juice of 1 lemon

  • Salt and chilli flakes to taste – you can skip the use of chilli flakes if needed

  • Canned chickpeas: Simply drain the liquid, rinse the chickpeas, and use.
